Focaccia with semi-dried cherry tomatoes & goat cheese

14 oz. all-purpose flour
1 teaspoon sugar
1 package dry yeast
1 cup water
1 teaspoon salt
6 teaspoons extra virgin olive oil
Kémia semi-dried cherry tomatoes
Crumbled goat cheese, to taste


  1. In a small bowl, mix sugar, yeast, and 1/5 cup of warm water. Let it stand for about 10 minutes.
  2. In a large bowl, combine flour, extra virgin olive oil, and yeast mixture. Stir well with a wooden spoon.
  3. Add salt, and stir again.
  4. Put the dough on a lightly floured surface and knead until smooth and elastic.
  5. Transfer it to a lightly floured bowl, cover, and let it sit until doubled in volume.
  6. Preheat the oven to 446°
  7. When the dough is ready, put it again on the lightly floured surface and knead for 2 -3 minutes.
  8. Divide it into two equal portions. Flat each dough on the lightly oiled round baking sheet.
  9. Press it several times with your fingers and drizzle with extra virgin olive oil.
  10. Sprinkle with salt and bake for about 20 minutes.
  11. Top with Kémia sundried tomatoes and goat cheese.
  12. Serve and enjoy.

Additional Tips

  • For more flavor, you can add Kémia’s black Tazilla olives and Grilled artichoke hearts.
