

Focaccia with semi-dried cherry tomatoes & goat cheese

Ingredients
14 oz. all-purpose flour
1 teaspoon sugar
1 package dry yeast
1 cup water
1 teaspoon salt
6 teaspoons extra virgin olive oil
Kémia semi-dried cherry tomatoes
Crumbled goat cheese, to taste
Instructions
- In a small bowl, mix sugar, yeast, and 1/5 cup of warm water. Let it stand for about 10 minutes.
- In a large bowl, combine flour, extra virgin olive oil, and yeast mixture. Stir well with a wooden spoon.
- Add salt, and stir again.
- Put the dough on a lightly floured surface and knead until smooth and elastic.
- Transfer it to a lightly floured bowl, cover, and let it sit until doubled in volume.
- Preheat the oven to 446°
- When the dough is ready, put it again on the lightly floured surface and knead for 2 -3 minutes.
- Divide it into two equal portions. Flat each dough on the lightly oiled round baking sheet.
- Press it several times with your fingers and drizzle with extra virgin olive oil.
- Sprinkle with salt and bake for about 20 minutes.
- Top with Kémia sundried tomatoes and goat cheese.
- Serve and enjoy.
